Celebrate St. Patrick's Day with a Kid-Friendly Green Power Smoothie

Happy St. Patrick's Day, everyone!  If you want to keep in the spirit of green food without the addition of using artificial food coloring, you can make a quick, tasty, healthy smoothie for the kids to enjoy.

Now wait..........what makes it green, you ask?  SPINACH! 

Before you run for the hills, I promise you the taste of spinach is undetectable.  Recently, my daughter and her friends wanted a cool treat because the temperature outside happen to reach 80 degrees in March.  So, I suggested this green power smoothie.  I didn't share the secret ingredient of why it was green, because a lot of kids (including my own) will shun a prepared item if they know what is in it before even tasting it.  Upon first taste, the girls LOVED the smoothie, and I heard the slurping of straws hitting the bottom of empty glasses shortly thereafter.

I love the fact that I can serve healthy, nutritious, fresh food that is pleasing to a child's eye and palate.

KID FRIENDLY GREEN POWER SMOOTHIE

   Serves 2

   6 oz plain yogurt (you can use homemade yogurt)
   1 cup diced pineapple, frozen
   1 banana, sliced into chunks
   1/2 cup orange juice
   1 heaping handful of spinach
   1 tsp vanilla
   1 Tbsp flax seed (optional)
   1 Tbsp organic, unrefined coconut oil (optional)

   Add all the ingredients into a high-powered blender.  Blend
   until smooth.  Serve immediately.
